Mānuka is a tree which is unique to New Zealand, Aotearoa. It’s fancy scientific name is Leptospermum Scoparium.
Honeybees collect the nectar from the small white flowers of the indigenous Mānuka tree and through their natural process of adding enzymes and dehydration - dark and aromatic Mānuka honey is created. The beekeepers pay particular attention to the flowering of the trees where their hives are located in remote parts of New Zealand-they know honey which is removed after the short flowering period (only a few weeks per year) will be primarily honey derived from the nectar of Mānuka flowers.
The beekeepers then test their honey at laboratories to ensure it meets New Zealand's legal requirements.
The strength or grade of Mānuka honey (sometimes known as activity) is dependent on the tree itself and the climate of where the tree is located, (rainfall, humidity, temperature etc.) Beekeepers often don’t know what grading their Mānuka will achieve!

Monofloral vs. Multifloral
You'll see products branded with Mono-floral or Multi-floral.
The difference is dependent on the honey and how it classifies according to New Zealand's Ministry of Primary Industry's definition, and what the bees have been feeding on.
What does it actually mean?
Mono, meaning 'one', refers to the fact there is predominantly only one type of nectar present in making the honey- in this case, Mānuka. We can't control where the honeybees fly, so they might decide to have a wee snack on other New Zealand native bush species like Black Beech or Kānuka, which flowers around the same time as Mānuka. When this happens, we label it with Multi-floral, indicating there are likely other nectar or pollen variations found in the jar.
Manuka Origins
In 1982, Dr. Peter Molan began discovering that Mānuka honey was a little different to other honey found around the world, due to its unique anti-microbial properties, which later became known as non-peroxide activity.
His papers are available to the public via Waikato University, which detail his journey around Mānuka honey, it's characteristics and what sets it apart from all other honey around the world.
